  1. Dice onion and sauté with oil in a pressure cooker without the lid on, till golden brown.
  2. Cut meat into small cubes and add to the onion. Cover the pot with a lid but don’t lock it yet.
  3. The meat will release water, uncover the lid, and add salt, garlic, bouillon, paprika, and marjoram. Cover with a lid and cook till all the liquid is gone.
  4. Add 1 cup of water and again cook till the water is gone again and the meet starts to stick to the bottom of the pot.
  5. Add four more cups of water tightly close the lid and bring to boil, turn down the temperature to medium low, and cook for 20 minutes.
  6. Check if the meat is tender.Place the pot in the sink and pour cold water over the top to unlock the lid.
  7. Thicken the sauce with one cup of water and ¼ cup of flour (mix well together. Pour this mixture into the sauce and cook for five more minutes.
  8. Chop half an onion and stir it in the sauce.
  9. Guláš can be served with pasta, rice, or dumplings.

  1. In a medium pot heat oil, and sate onion until you reach gold color.
  2. Cut the meat into smaller, thin pieces. Add the meat to the onion and stir. Let all the pieces turn brown and then add salt, bouillon, pepper, and ½ cup of water. Stir together.
  3. The step you are about to do is very important; it will effect the color and flavor of the final gravy. Turn the heat to high and let all the water evaporate. Let the meat stick to the bottom of the pan. Watch it closely and don’t let it burn. You will know it is ready when you stir the meat aside and the meat will move, but will leave brown coating on the bottom, and won’t be easily scraped.
  4. Now it is time to add another ½ cup of water. Repeat this technique 2 more times. After the third time, add again the ½ cup of water.
  5. Prepare the mushrooms. Use only the heads. With a damp paper towel wipe the tops of the mushroom heads. Slice the mushroom into thin slices. Add the mushrooms to the meat along with 1 cup of water, and let simmer covered for 5 minutes.
  6. Add another 1 tsp of salt and 2 cups of water. Bring to boil, cover with lid, and turn down the temperature to medium low.
  7. Simmer for 20 to 30 minutes or till the meat is tender. According to how much water is left you may have to add another cup of water before thickening the gravy.
  8. In ½ cup of water mix 2 Tbs of flour, and add to the meat. Stir and cook for 2 more minutes.

  1. First prepare the bacon sauce.
  2. Cut the bacon slices on very small pieces, and chop the onions.
  3. Preheat a large frying pan on high.
  4. Add bacon, stir and cook for 5 minutes.
  5. Add onion, stir and cook for additional 5 minutes.
  6. Add 1 cup of water, stir, turn heat to medium, and let cook till all the water is gone.
  7. Add garlic salt, Beef flavor bouillon, and one more cup of water. Cover with lid, and cook for 10 minutes.
  8. In 1/3 cups of water mix 1 tablespoon of cornstarch. Stir the liquid into the bacon sauce, and cook for 3 minutes. Set aside.
  9. Grill or fry lightly salted pork chops. If grilling, drizzle some olive oil on both sides and lightly season with salt. Don’t over cook the chops.
  10. To serve, place cooked chops on a plate and pour the bacon sauce on top.
  11. This dish is best served with Czech red cooked cabbage and potato dumplings, or any potato dish and vegetables.

Vepřo-Knedlo-Zelo   Pork Roast

 

This dish truly represents the Czech cuisine, and has been categorized as the
“National dish”.
Czech dishes are usually created and served by combining meat with some kind of sauce, and a side dish, (dumplings, potatoes, rice or pasta).
In this case  this dish is a combination of Pork Roast, Sauerkraut and Dumplings.
There are different kinds of dumplings, and “Bread dumplings” best compliment this specific dish.
To save time, it’s better to work on making everything at the same time.  Starting with chopping the onion, enough for both the roast and the sauerkraut. Than move on to the roast.  Once the roast is safely in the oven, make the dumpling dough. And when the dumplings are rolled into shape, they have to rest for a little while, so here is your opportunity to get the sauerkraut going.

Instructions
  1. Place rice in a casserole dish and rinse with water three times. Add 3 cups of water to the rice, and season with salt. Cover the casserole dish with plastic foil, and then cook in a microwave for 20 minutes.
  2. While the rice is cooking, heat up the oil in a pan and, sauté the onion till slightly golden .
  3. Add chicken, salt, pepper, and garlic powder. Stir and let the chicken slightly stick to the bottom of the pan. Cast iron pan works best.
  4. Add half a cup of water and scrape the chicken off the bottom of the pan. Add corn, broccoli, and beans, and1 cup of water. Stir and cook for five minutes.
  5. Add barbecue sauce, soy sauce, seasoning salt, beef flavored bouillon, and continue cooking. Cook while stirring until all the liquid is gone.
  6. Place hot steamed rice in a larger serving bowl, and empty the chicken into the rice. Mix well.
  7. Serve hot. Place amount of rice on a plate, then garnish with shredded cheese. You may also drizzled ketchup over the top.

Instructions
  1. In a frying pan melt 2 tablespoons of butter and sauté chopped 1/2 of onion until golden brown color.
  2. Cut the sliced ham into small pieces and stir into the onion. In the bowl beat six eggs and season with salt and pepper.
  3. Pour the eggs into the frying pan and constantly stir until eggs are fully cooked, then set aside.
  4. Prepare nine slices of meat by seasoning them from both sides and placing them next to each other on a flat surface preferably cutting board.
  5. On each slice spread a little bit of mustard; place one slice of cheese, and one spoon full of scrambled eggs.
  6. Cut the carrots, pickles and hotdogs into quarters and then thirds, and place one wedge of each on top of the scrambled eggs.
  7. Now wrap the meat around the filling and secure the top and ends with toothpicks. Use the string to wrap around the meat tightly so no filling is visible. Repeat this process with the rest of the rolls.
  8. Chop one whole onion and sauté on 2 tablespoons of oil in a pressure cooker without the lid.
  9. Add the beef rolls and stir them around. Make sure the rolls are brown from all sides.
  10. Cook all the moisture out and let the onion stick to the bottom of the pan.
  11. When the bottom is slightly brown add half a cup of water and stir while scraping the onion off the bottom.
  12. Repeat this process one more time and then add 2- ½ cups of water into the pan along with one cube of beef flavored bouillon and salt and pepper.
  13. Close the lid securely and turn the heat to high.
  14. Once the lid starts steaming turn the heat to medium low and cook for 35 to 45 minutes.
  15. Place the whole pressure cooker in the sink and let cold water run on top of the lid.
  16. When the lid unlocks, open the pan, and remove rolls on a cutting board.
  17. Take out all the toothpicks and remove the string. Bring the remaining liquid to a boil.
  18. In a cup, mix ¼ cup of water with 2 tablespoons of flour and pour it into the liquid. With constant stirring cook for another two minutes.
  19. Add the rolls back into the gravy.
  20. Serve with rice or Bread dumplings.

  1. Prepare 1 plate, and 2 serving bowls.
  2. On the plate pour 2 cups of flour.
  3. In one bowl beat 4 eggs with half a teaspoon of salt and two tablespoons of milk.
  4. Into the third bowl pour plain breadcrumbs.
  5. Place the dishes in this order next to each other.
  6. Prepare the meat. Řízek is usually made from pork, chicken, or fish. If you are using pork or chicken, tenderize the meat with a meat mallet to an even thickness.
  7. Salt each piece from both sides and place on a plate.
  8. Take the first piece of meat, coat it with the flour from both sides. With the help of fork dip the meat in the egg mixture, let drip off the exes egg, and coat in the breadcrumbs.
  9. After you coat all the pieces, preheat oil ( 1/4 inch high) in a frying pan. Turn the heat to medium and fry the meat from both sides till golden brown.

Serve with potato salad or any potato side dish.

  1. Sauté onion on 4 tablespoons of oil.
  2. If the meat is not pre-sliced, cut thin slices about quarter of an inch thick and 2x2inches large. Pound the slices of meat with meat mallet, sprinkle salt and pepper over the tops, flip them over, and season from the other side.
  3. Scrape the onion to the side of the pot and start placing a piece of meat, one by one on the bottom of the pan. Brown each piece from both sides, and push them aside in the pan. Repeat this process with all the pieces. It is important that the heat is on high.
  4. The meat will start creating a brown coating on the bottom of the pan, and that is what we are looking for.
  5. Add half a cup of water to the pan and stir the meat around, until all of the brown coating is released from the bottom into the sauce.
  6. Cook out all the liquid from the pan, until it starts catching to the bottom again.
  7. Add one cup of water, stir from the bottom, releasing all the brown coating from the bottom again.
  8. Then add 2 more cups of water, and one cube of beef flavored bouillon. It would be best if you use a pressure cooker. Cover the pot with lid and close tightly. Once the pot starts steaming, turn down the heat to medium low and cook for 25-35 minutes.
  9. When done, place the pressure cooker in the kitchen sink, and let cold water run over the top of the lid. Once safe to open, remove the lid add 1 cup of water and bring to boil.
  10. Mince one clove of garlic and add to the meat.
  11. In a small bowl whisk half a cup of water with 4 tablespoons of flour, and stir it into the meat. Let cook for another five minutes.
Recipe Notes

This dish can be served with steamed rice or potato dumplings, and tomato or cucumber salad on the side.

  1. Peel the potatoes and shred them in a bowl with a cheese grader on small or big holes.
  2. Mince garlic with salt and add with the rest of the ingredients to the potatoes. Mix well.
  3. Preheat ¼ cup of oil in a frying pan, spoon out the dough on the pan, and spread it out to create even height pancake shape.
  4. When the edges turn golden brown and the centre yellow, flip and fry on the other side.
  5. When done place on a paper towel to drain exes grease. Serve warm.
  6. After frying several pancakes you may have to add more oil.
Recipe Notes

To this recipe you may also add chopped ham or sausage.

Serve warm with ketchup, barbecue sauce, or Thousand Island dressing.
