  1. Dice onion and sauté with oil in a pressure cooker without the lid on, till golden brown.
  2. Cut meat into small cubes and add to the onion. Cover the pot with a lid but don’t lock it yet.
  3. The meat will release water, uncover the lid, and add salt, garlic, bouillon, paprika, and marjoram. Cover with a lid and cook till all the liquid is gone.
  4. Add 1 cup of water and again cook till the water is gone again and the meet starts to stick to the bottom of the pot.
  5. Add four more cups of water tightly close the lid and bring to boil, turn down the temperature to medium low, and cook for 20 minutes.
  6. Check if the meat is tender.Place the pot in the sink and pour cold water over the top to unlock the lid.
  7. Thicken the sauce with one cup of water and ¼ cup of flour (mix well together. Pour this mixture into the sauce and cook for five more minutes.
  8. Chop half an onion and stir it in the sauce.
  9. Guláš can be served with pasta, rice, or dumplings.

  1. Peel and dice potatoes, and cook them in 3 cups of water with 1 tsp of salt for 25 minutes.
  2. Drain all the water; mash the potatoes till free of lumps, and let cool.
  3. Place the potatoes on a flat surface; add egg, farina hot cereals, flour, and salt. By hand kneed into smooth dough.
  4. Out of the dough form little balls about the size of a quarter.
  5. In a small bowl, beat 2 eggs with 2 Tbs of milk and ½ tsp of salt.
  6. Take four potato balls at a time, coat them in the egg mixture and spoon them out with a large serving spoon with holes, so the excess egg can drip back into the bowl.
  7. Prepare another bowl with breadcrumbs. Coat the the balls in the bread crumbs. Place breaded balls on a plate.
  8. Preheat oil (1/2 inch high) in the frying pan. Drop a pinch of breadcrumbs in the oil to test the temperature. If the breadcrumbs start bubbling the oil is ready place as many balls in the pan as you can fit, and turn the temperature down to medium. The balls should be nice golden brown.
  9. Turn all the balls over so they cook evenly from both sides.
  10. Remove the balls from pan and place them in a bowl lined with paper towel. Sprinkle with salt and serve as a side dish to any meat.

  1. Melt butter in a medium sauce pan on Medium high.
  2. Add onions and sauté them till slightly glossy.
  3. Add chopped mushrooms, stir and add 1/4 cup of water and 1 tsp of salt. Cover with lid, turn temperature down to medium low, and let cook for 5 minutes.
  4. Uncover the lid ,set aside, add cream, milk, and crumbled bouillon. Stir and bring to boil.
  5. In a 1/2 cup of milk mix 3 tablespoons of flour till no longer lumpy. Pour the mixture into the sauce and constantly keep stirring for 3 more minutes on medium temperature.
  6. Add 1/2 tsp of salt to finish the taste.
  7. Serve with Bread Dumplings and a Roast Beef. As a finishing touch serve with jellied Cranberry Sauce on a side.

  1. In a medium pot heat oil, and sate onion until you reach gold color.
  2. Cut the meat into smaller, thin pieces. Add the meat to the onion and stir. Let all the pieces turn brown and then add salt, bouillon, pepper, and ½ cup of water. Stir together.
  3. The step you are about to do is very important; it will effect the color and flavor of the final gravy. Turn the heat to high and let all the water evaporate. Let the meat stick to the bottom of the pan. Watch it closely and don’t let it burn. You will know it is ready when you stir the meat aside and the meat will move, but will leave brown coating on the bottom, and won’t be easily scraped.
  4. Now it is time to add another ½ cup of water. Repeat this technique 2 more times. After the third time, add again the ½ cup of water.
  5. Prepare the mushrooms. Use only the heads. With a damp paper towel wipe the tops of the mushroom heads. Slice the mushroom into thin slices. Add the mushrooms to the meat along with 1 cup of water, and let simmer covered for 5 minutes.
  6. Add another 1 tsp of salt and 2 cups of water. Bring to boil, cover with lid, and turn down the temperature to medium low.
  7. Simmer for 20 to 30 minutes or till the meat is tender. According to how much water is left you may have to add another cup of water before thickening the gravy.
  8. In ½ cup of water mix 2 Tbs of flour, and add to the meat. Stir and cook for 2 more minutes.

  1. In 3/4 cups of luke warm milk, dessolve 1 teaspoon of sugar, add yeast and 1 Tbs of flour. Mix well with your fingers and feel for any lumps of flour.
  2. Let rest till foam forms on top.
  3. In a dough mixer mix flour and salt. Stir melted butter into the other half of milk and pour into the mixer along with the yeast mixture. Mix well. The dough will be very stiff.
  4. Remove and kneed by hand on a flat surface. Place it in greased large bowl, cover, and let rest for 1 hr. in a warm place. (You can preheat the oven to lowest temperature, turn it off, and let it rise there. Make sure it’s warm not hot.
  5. When the dough is twice the size, remove it from bowl and kneed it again on flat surface. You may use more flour if too sticky.
  6. Roll the dough out into a 4mm thick square. With knife cut two lines horizontally and two vertically like a tic tack toe. You will end up with 9 small squares .Cut each square into two triangles, and you will end up with 18 triangles.
  7. Take one piece, place in front of you like a tent, fold the two sharp edges slightly in, and start rolling from bottom up toward the top edge. Press firmly when rolling the dough. When finished, roll the whole rolled up shape together to seal all lose parts.
  8. Repeat with the rest of the triangles. Place the rolls on a greased baking sheet, and space them at least 1 in. from each other.
  9. In a small bowl mix one egg white and 2 Tbs of water. Brush the egg wash on each roll and sprinkle with sea salt.
  10. Place back in a warm oven and let rise again. Preheat the oven to 375° F. Bake for 15 minutes.
  11. Take the rolls out and brush each again with egg wash. Bake for 15 more minutes.

  2. Cut cabbage into four quarters. Cut off the white centers, and finely chop. Add to the pot with onions, stir.
  3. Add water, salt, caraway seed and sugar.
  4. Bring to boil, cover with lid, turn the heat down to medium low and cook for 35 minutes.
  5. remove the lid and add 5 tablespoons of vinegar. Turn the heat to high, and let most of the water cook off.
  6. In 1/2 cup of water mix 2 tablespoons of flour and pore it into the cabbage. Keep stirring.
  7. Add additional 1/2 tsp of salt to finish the taste. Cook for 5 more minutes with occasional stirring.
  8. Serve hot as a side dish to meat and dumplings.

  1. Place all the ingredients for the dough in a bowl. Mix all by hand into soft , slightly sticky dough. Place the dough in a plastic bag and put it in a freezer, while making the filling.
  2. Make the filling. In a medium bowl mix egg white with rum and vanilla, add nuts and sugar. Stir, and spoon it out in a corner of a medium zipper bag. Twist the bag tightly around the filling.
  3. Take the dough out of a freezer, divide into 6 identical balls. Flour the surface on which you are going to work on.
  4. Roll each ball onto 4 mm thick circles. Cut each circle into 6 widgets.
  5. Place the wide side of the widget closer to you. Cut the corner off of the bag with filling, and squeeze some filling alongside the longer side of each wedge.
  6. Start rolling the the dough toward the other end.
  7. Spray backing sheet with nonstick spray. Place about 12 crescent on one sheet. Make sure the filling on the edges is pointing up.
  8. In a small bowl mix egg yolk and 1 tbsp of water. Brush the egg-wash on each crescent.
  9. Preheat the oven to 360 F and bake for 20 minutes.
  10. After the crescents are done coat them in 2 parts of powder sugar and one part granulated sugar. Let cool before eating.

  2. In a dough mixer place flour, salt, sugar, egg yolks, yeast mixture, milk, melted butter and lemon zest. Kneed it well.
  3. Place the dough in greased bowl, covered with plastic foil, and place it in a warm place to rise.
  4. Once the dough has doubled its size, empty it on a lightly floured surface. Pinch off identical pieces. Roll the dough between both palms into smooth ball. Flatten each piece with your fingers, and place it in the palm of your left hand. Place about one full spoon of desired filling in the middle of the circle. Wrap the dough around the filling, by pinching the edges together like a knapsack. Make sure no filing is running out.
  5. Brush oil in the 2” deep baking pan and place the filled rolls next to each other, with the pinched side down. Also brush the sides of each roll with oil. This will provide easy separation of the rolls from each other.
  6. Let the rolls rest for another 30 minutes.
  7. Preheat the oven to 350°
  8. Bake the rolls for 30 to 35 minutes. When done baking ,let cool and then flip on a plate. Dust with powder sugar.

  1. Peel and cut potatoes into smaller pieces. Cook them in a quart of water, with 1 tsp of salt for 30 minutes. Drain all the water and place potatoes in a shallow bowl or on a counter top. Mash the potatoes, till the texture is free of lumps and smooth. Let cool.
  2. In a medium bowl mix 1 cup of all-purpose flour,1 ½ cups of farina hot cereals,1 tsp of salt and 1 tsp of Baking powder. Mix well and pour it on the potatoes.
  3. Add two eggs, and by hand kneed smooth dough.
  4. From the dough form about 12 identical balls 2 in. in diameter.
  5. Take each ball, place it in the palm of your hand and with the other hand form flat-like a thick pancake shape.
  6. Curve your fingers up, forming a nest like shape.
  7. Place a large spoon full of ham in the cup and start gathering the dough around the ham. Make sure all the ham is wrapped inside the dumpling and no pieces are showing.
  8. Place ½ cup of hot cereals in a small bowl and roll the dumpling in it.
  9. Repeat this process with all the dumplings.
  10. Place the dumplings into boiling water. Cover with lid and bring to boil again. Turn down the heat to medium and cook for 10 minutes.
  11. When done cooking take the dumplings out of water immediately and place them in a large bowl and puncture once with a fork. Cover with clean cloth.
  12. If your pot was not large enough to hold all the dumplings, repeat the process with the rest of the dumplings in the same water.
  13. In a frying pan sate on a 4 Tbs of butter 2 large onions till golden brown. This dish is served with Czech sauerkraut and fried onions on top.
