  1. In a small bowl, mix warm milk with a pinch of sugar and yeast. Set aside.
  2. In a shallow bowl or on a counter top make a pile of flour, with a hole in the middle.
  3. Add eggs, yeast mixture, sugar, and shortening. Mix all ingredients by hand and form smooth ball.
  4. Cut it in half. Roll each piece into flat thin rectangle. To prevent the dough from sticking and ripping, roll the dough on a piece of plastic.
  5. Peel and core the apples, and shred them on a cheese grader (big holes).
  6. First sprinkle some breadcrumbs (original) or Graham cracker crumbs, all over the dough, which will prevent the juices from the apples from soaking the dough through.
  7. Now spread the apples all over the dough(if apples are too juicy squeeze extra juice out before applying to the dough), leaving about 2 inches at the top empty.
  8. Sprinkle on top of the apples the following:
  9. 1/4 cup sugar 1/2 cup brown sugar 2 tbsp cinnamon 1/2 cup raisins Optional: nuts or coconut
  10. Now start rolling the dough up (like a cinnamon roll). To seal the roll, pull the top edge to the middle, facing top. Brush some water under the edge and press the two layers together. Now pinch the side corners together, sealing all the apples in.
  11. Place on a baking sheet lined with parchment paper brush the top with egg wash and repeat the process with the other piece of dough.
  12. Place both shapes on one baking sheet and bake at 350 °F for 40 minutes. Dust with powder sugar before serving.

  1. Cut leftover dumplings in to 1 cm thick slices.
  2. Preheat a frying pan on medium heat.
  3. In a serving bowl mix eggs with milk, vanilla, salt, and sugar.
  4. Dip one dumpling at a time into the egg mixture, submerge it with fork to absorb more egg, and repeat from other side.
  5. Spray the bottom of the pan with non stick spray, and place dumplings on the hot surface. Turn down the heat to Low and cook till the bottoms turn light brown, than flip each dumpling over and continue frying the other side.
  6. Add a little bit of butter on each dumpling while still in the pan.
  7. Remove done dumpling on a plate, serve plain with Maple syrup and cream, or with fruit and syrup and cream or bananas with chocolate syrup and cream. The options are personal so be creative.

  1. In a frying pan melt 2 tablespoons of butter and sauté onion.
  2. Add sliced pepper and diced tomatoes. Cook for five minutes covered.
  3. Add Polish sausage cut into small pieces, pinch of salt and black pepper. Cook for another five minutes.
  4. Beat the eggs in a cup and pour it over the vegetables. Mix with wooden spoon and continue stirring for two more minutes.
  5. This dish may be served as a breakfast or light dinner. Serve with toast or Czech bread.

  1. Peel and cut potatoes into smaller pieces. Cook them in a quart of water, with 1 tsp of salt for 30 minutes. Drain all the water and place potatoes in a shallow bowl or on a counter top. Mash the potatoes, till the texture is free of lumps and smooth. Let cool.
  2. In a medium bowl mix 1 cup of all-purpose flour,1 ½ cups of farina hot cereals,1 tsp of salt and 1 tsp of Baking powder. Mix well and pour it on the potatoes.
  3. Add two eggs, and by hand kneed smooth dough.
  4. From the dough form about 12 identical balls 2 in. in diameter.
  5. Take each ball, place it in the palm of your hand and with the other hand form flat-like a thick pancake shape.
  6. Curve your fingers up, forming a nest like shape.
  7. Place a large spoon full of ham in the cup and start gathering the dough around the ham. Make sure all the ham is wrapped inside the dumpling and no pieces are showing.
  8. Place ½ cup of hot cereals in a small bowl and roll the dumpling in it.
  9. Repeat this process with all the dumplings.
  10. Place the dumplings into boiling water. Cover with lid and bring to boil again. Turn down the heat to medium and cook for 10 minutes.
  11. When done cooking take the dumplings out of water immediately and place them in a large bowl and puncture once with a fork. Cover with clean cloth.
  12. If your pot was not large enough to hold all the dumplings, repeat the process with the rest of the dumplings in the same water.
  13. In a frying pan sate on a 4 Tbs of butter 2 large onions till golden brown. This dish is served with Czech sauerkraut and fried onions on top.

  1. Cut the bacon into small squares and fry it on a frying pan along with one chopped onion.
  2. Cook until onion is glossy color and bacon crispy. Set aside to cool.
  3. In a medium bowl mix turkey and beef, add salt, garlic, eggs, marjoram, and breadcrumbs. Mix well.
  4. In a separate bowl pour cup of milk and individually dip one slice of bread at a time in the milk. Squeeze the access milk out of the bread, and add the soaked bread to the meat mixture along with the bacon and onion.
  5. Stir everything together.
  6. Wet your hands and form out of the mixture two same size cylinder shapes, and place them on greased baking dish.
  7. Bake at 375° F for one hour and 15 minutes or until the meatloaf turns brown.
  8. After done baking, slice the meatloaf into half inch thick slices. Serve with mashed potatoes and gravy and vegetables.

  1. In a small bowl mix 1/2 cup of water, 1 tsp of sugar, and 2 Tbs yeast. Set aside.
  2. In a dough mixer, cream margarine with sugar, add eggs one by one, salt, and 2 cups of flour.
  3. Add 1-1/2cups of water, yeast mixture, and 2 more cups of flour.
  4. Switch beaters to dough hook. Add lemon zest and the rest of the flour. Mix well. If the dough sticks to your fingers when pinched add more flour.
  5. Place in a bowl with greased bottom, cover, and let rise in warm place.
  6. Empty the dough from the bowl on to a floured surface. Kneed till more firm.
  7. Roll out the dough like a pizza in a rectangle shape.
  8. Spray baking sheet with non-stick spray. Place the dough on it, and spread it with your fingers covering the whole sheet. With bent pointer push the dough towards the edge of the pan creating pizza like edge.
  9. Make toping by mixing topping ingredients together by hand.
  10. For Koláče you may use plums, apricots, or blueberries. If using plums or apricots, split the fruit in half, take the pit out, and place the fruit centre down. Completely over the dough’s surface, and sprinkle with ½ c of sugar and crumble toping over the fruit.
  11. Preheat the oven to 350° F and bake for 40 minutes or till the edges are light brown.
  12. You can also make different sizes and shapes, where you leave edge like pizza. When using this method brush the edges with egg wash, and bake 25 to 30 minutes.

  1. In a medium bowl combine milk, sugar, salt, and vanilla
  2. Mix with wire whisk and start slowly adding flour, mix well till the dough is smooth.
  3. Preheat frying pan, spray with nonstick spray, and pour in thin layer of dough. Depending on the size of your pan, make sure the dough covers the whole area. Once you pour in the dough lift the pan and in rotating motion of the pan, let the dough run to the sides .
  4. Wait till the top of the dough turns yellow and with the help of a knife lift the corner of the crape ,and check if ready. What are you looking for is lite brown spots.
  5. Turn the crape over.
  6. when done stack the crapes on top of each other an cover with foil.
  7. Prepare the filing. In a mixing bowl place the cream cheese, add the sugar and with fork work the sugar in .
  8. Add the yogurt, mix well. Set aside.
  9. Cut washed strawberries in to slices. Reserve half of them whole for topping, and the rest smash with fork and 2 tbsp of sugar (you want pieces not sauce) .
  10. To finish the crapes, take one piece, place it on a plate, spread thin layer of jam on the whole crape, spoon out cheese sauce right in the middle, top with spoon full of mashed strawberries.
  11. Now fold one end over the center, and the other over the first. Top with sliced strawberries and finish with large spoon full of cool whip.
Recipe Notes

I use the electric grill to make these. You can cook 3 crapes at a time an be done faster. These crapes would be served as  a desert,but if you want to serve them with a soup use just jam or yogurt instead of filling. IMG_5721

Nuttella (hazel nut spread) with bananas and cool whip is also a great way to serve crapes.

  1. In a medium bowl beat eggs, water and salt. Start adding the flour. Empty the bowl on a clean flat surface and knead all the flower into the dough.
  2. The dough will be smooth but hard.
  3. Divide the dough in two and roll each piece on a floured surface into very thin round shape.
  4. Preheat the oven to 170 °F. Turn off the oven and place the dough on a baking rack in the oven to dry for 15 minutes. The flat piece will be stiff once ready.
  5. Remove the piece on a cutting board and slice the dough along the side of the impressions that were created from the baking rack. Stack the pieces on top of each other and cut with a sharp knife thin noodles. These noodles can be used right away or let them dry on a baking sheet for day or two and store it in a Ziplock bag for later use

  1. Make Cheesecake Filling
  2. Preheat the oven to 350°F.
  3. Grease 1-inch deep baking sheet.
  4. In a large, shallow bowl mix all the ingredients by hand into a smooth dough.
  5. Cut 1/3 of the dough off.
  6. Place the bigger piece of dough on the baking sheet, and with the help of a rolling pin and your fingers, spread the dough over the whole bottom.
  7. With your index finger press the edge of the dough up the sides to create a rim.
  8. Spread the cheesecake filling on top.
  9. From the leftover dough roll out long snakes, thick like a pencil.
  10. Place them over the filling, creating an angled plaid design with 2-inch spaces.
  11. Place some raisins into the individual windows. Bake at 350°F for 35 minutes or till the top dough has turned golden.
  12. Sprinkle powder sugar over the top.
  13. Cut when cool.

Instructions
  1. In a frying pan melt 2 tablespoons of butter and sauté chopped 1/2 of onion until golden brown color.
  2. Cut the sliced ham into small pieces and stir into the onion. In the bowl beat six eggs and season with salt and pepper.
  3. Pour the eggs into the frying pan and constantly stir until eggs are fully cooked, then set aside.
  4. Prepare nine slices of meat by seasoning them from both sides and placing them next to each other on a flat surface preferably cutting board.
  5. On each slice spread a little bit of mustard; place one slice of cheese, and one spoon full of scrambled eggs.
  6. Cut the carrots, pickles and hotdogs into quarters and then thirds, and place one wedge of each on top of the scrambled eggs.
  7. Now wrap the meat around the filling and secure the top and ends with toothpicks. Use the string to wrap around the meat tightly so no filling is visible. Repeat this process with the rest of the rolls.
  8. Chop one whole onion and sauté on 2 tablespoons of oil in a pressure cooker without the lid.
  9. Add the beef rolls and stir them around. Make sure the rolls are brown from all sides.
  10. Cook all the moisture out and let the onion stick to the bottom of the pan.
  11. When the bottom is slightly brown add half a cup of water and stir while scraping the onion off the bottom.
  12. Repeat this process one more time and then add 2- ½ cups of water into the pan along with one cube of beef flavored bouillon and salt and pepper.
  13. Close the lid securely and turn the heat to high.
  14. Once the lid starts steaming turn the heat to medium low and cook for 35 to 45 minutes.
  15. Place the whole pressure cooker in the sink and let cold water run on top of the lid.
  16. When the lid unlocks, open the pan, and remove rolls on a cutting board.
  17. Take out all the toothpicks and remove the string. Bring the remaining liquid to a boil.
  18. In a cup, mix ¼ cup of water with 2 tablespoons of flour and pour it into the liquid. With constant stirring cook for another two minutes.
  19. Add the rolls back into the gravy.
  20. Serve with rice or Bread dumplings.
